  • 2 tbsp ghee
  • 1/4 cup chopped dry fruits (almonds, cashews, raisins)
  • 1 small cinnamon stick
  • 2 cloves
  • Salt to taste
  • 2 cups water

Instructions

Step 1: Prepare the Rice

  • Rinse the Kiloi rice under running water 2–3 times until the water runs clear.
  • Soak the rice in a bowl of water for 20 minutes.
  • This helps the grains cook evenly and stay fluffy.
  • Drain the soaked rice before cooking.

Step 2: Infuse the Saffron

  • Warm 2 tablespoons of milk (not boiling) and add a pinch of saffron strands.
  • Let it sit for about 10 minutes so the saffron releases its rich color and aroma.
  • Set aside, this will give your rice a golden hue and festive fragrance.

Step 3: Roast the Dry Fruits

  • Heat ghee in a deep, heavy-bottomed pan or kadai.
  • Add the chopped almonds, cashews, and raisins.
  • Sauté on medium heat until the nuts turn golden and the raisins puff up.

Remove them with a spoon and keep aside for garnishing later, leaving the flavored ghee in the pan.

Step 4: Temper the Spices

  • In the same ghee, add the cinnamon stick and cloves.
  • Fry for 20–30 seconds until they release their aroma.
  • This will create a fragrant base for the rice.

Step 5: Cook the Rice

  • Add the drained Kiloi rice to the pan.
  • Stir gently for 1–2 minutes, coating the rice grains in the ghee and spices.
  • Pour in 2 cups of water along with the saffron milk.
  • Add salt to taste and stir once gently.

Step 6: Simmer to Perfection

  • Bring the mixture to a gentle boil, then reduce the flame to low.
  • Cover with a tight-fitting lid and cook for 12–15 minutes, or until the rice absorbs all the liquid.
  • Avoid stirring while cooking to keep the grains from breaking.

Step 7: Garnish and Serve

Once cooked, fluff the rice lightly with a fork.
Garnish with the golden dry fruits you roasted earlier.
